But I am usually so lazy when it comes to making desserts. I don’t want to have to measure or mix anything which most tasty baked treats require. All I’m really looking for is a little melted chocolate action. Just gimme the goods already! Colin is definitely the baker in the family and makes killer chocolate chip cookies. But guess who typically cleans up the mess?
Last night I was desperate for something melty and warm but I didn’t want to fire up the oven or do a lot of cleaning. Inspiration hit! I’m almost embarrassed to post this “recipe” or even call it to your attention, but since I’ll most likely fall back on this in moments of great need, I thought I’d better document it.
Lazy Chocolate Melts
Handful of almonds
Handful of pecans
Handful of walnuts
Handful of chocolate chips
Sprinkle of shredded coconut
Throw everything but coconut into a microwave safe bowl. Nuke for 30 seconds or until chocolate is melted. Top with coconut. Stir.
This is merely a take-off of an old standby that Colin and I typically resort to which is almonds, dried cranberries, and chocolate chips in a bowl. But, again, sometimes the chocolate just needs a bit of melting to make it complete…
